3–Bean Salad

  • 1 can (15 oz.) Read® Three Bean Salad, drained
  • 1 cup diced fresh red pepper
  • 1 cup diced green pepper
  • 2 tbsp. finely minced parsley
  • 1 cup chopped red onion
  • 1/2 cup white vinegar
  • 1/3 cup sugar
  • 1/2 cup oil
  • 1/4 tsp. ground pepper

Heat together vinegar, sugar, and onion; cool and add oil. Pour over all remaining ingredients. Chill several hours or overnight. Makes 6 servings.
