Mediterranean Meatloaf

  • 1 can (8.5 oz.) Libby’s® Peas & Carrots, drained
  • 1 can (14.5 oz.) diced tomatoes with onion and herbs
  • 1–1/2 pounds ground beef
  • 2/3 cup prepared Italian–seasoned bread crumbs
  • 2/3 cup chopped red onion
  • 3 garlic cloves, minced
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 eggs

Preheat oven to 350oF. In large mixing bowl, mix ground beef, bread crumbs, onion, garlic, salt, pepper and eggs. Add peas and carrots; mix well. Place mixture in 9x13–inch baking dish and shape into a loaf. Bake 30 minutes. Spoon diced tomatoes over top of meatloaf and bake an extra 30 minutes. Let stand for at least 5 minutes before serving. Makes 6 servings
